- 2 whole limes
- 3 eggs
- 175 g granulated sugar
- 50 g whole milk
- 65 g neutral oil
- 1 tbsp vanilla bean paste
- 1/4 tsp salt
- 250 g all-purpose flour
- 2 1/2 tsp baking powder
Lime icing
- 1 cup powdered sugar
- 1 tsp lime juice
- 2 tbsp water

Method
- Put the whole limes, including the skin, in a saucepan of water. Boil for 10 minutes, then remove and drain them.
- Preheat the oven to 325°F (approximately 165°C). Grease or line a loaf tin.
- Combine the softened whole limes, eggs, sugar, milk, neutral oil and vanilla bean paste in a large bowl. Blend until smooth with an immersion blender.
- Sift in the salt, flour and baking powder, then mix just until no dry flour remains.
- Pour the batter into the prepared loaf tin and smooth the surface.
- Bake for 45–55 minutes, until a toothpick inserted into the centre comes out clean.
- Let the loaf cool completely before removing it from the tin.
- Mix the powdered sugar, lime juice and water until smooth, then spread the icing over the cooled loaf. Let it set before slicing.
