Cake

  • 2 whole limes
  • 3 eggs
  • 175 g granulated sugar
  • 50 g whole milk
  • 65 g neutral oil
  • 1 tbsp vanilla bean paste
  • 1/4 tsp salt
  • 250 g all-purpose flour
  • 2 1/2 tsp baking powder

Lime icing

  • 1 cup powdered sugar
  • 1 tsp lime juice
  • 2 tbsp water

Method

  1. Put the whole limes, including the skin, in a saucepan of water. Boil for 10 minutes, then remove and drain them.
  2. Preheat the oven to 325°F (approximately 165°C). Grease or line a loaf tin.
  3. Combine the softened whole limes, eggs, sugar, milk, neutral oil and vanilla bean paste in a large bowl. Blend until smooth with an immersion blender.
  4. Sift in the salt, flour and baking powder, then mix just until no dry flour remains.
  5. Pour the batter into the prepared loaf tin and smooth the surface.
  6. Bake for 45–55 minutes, until a toothpick inserted into the centre comes out clean.
  7. Let the loaf cool completely before removing it from the tin.
  8. Mix the powdered sugar, lime juice and water until smooth, then spread the icing over the cooled loaf. Let it set before slicing.
