Ingredients

Chocolate loaf

  • 2 whole eggs
  • 340 g plain nonfat Greek yogurt
  • 15 g light butter, melted
  • 75–90 ml unsweetened almond milk
  • 70 g oat flour
  • 40 g all-purpose flour
  • 75 g chocolate protein powder (about 2½ scoops)
  • 25 g dark cocoa powder
  • 120 g granular zero-calorie sweetener
  • 3 g baking powder
  • 1 g baking soda
  • 1 g salt
  • 1 g xanthan gum (optional)
  • Vanilla, amount unspecified (mentioned in the creator's method but absent from the ingredient list)

Frosting and topping

  • 113 g plain nonfat Greek yogurt
  • 24 g nonfat cream cheese
  • 60 g powdered zero-calorie sweetener, or more to taste
  • Small splash of unsweetened almond milk, if needed
  • 1 Oreo cookie, crushed

Method

  1. Preheat the oven to 350°F (approximately 177°C). Grease or line a loaf pan with baking parchment.
  2. Whisk the eggs, 340 g Greek yogurt, melted light butter, 75 ml almond milk and, if using it, vanilla until smooth.
  3. In another bowl, combine the oat flour, all-purpose flour, protein powder, cocoa powder, granular sweetener, baking powder, baking soda, salt and optional xanthan gum.
  4. Stir the dry ingredients into the wet ingredients. The batter should be thick, dense and spreadable, not pourable. If too dry, add the remaining almond milk gradually, up to 90 ml total.
  5. Spread the batter in the prepared loaf pan. Bake for 40–45 minutes, until the centre is set and a toothpick comes out mostly clean. Avoid overbaking.
  6. Whisk 113 g Greek yogurt, cream cheese and powdered sweetener into a frosting, adding more sweetener to taste or a splash of almond milk if needed. Refrigerate while the loaf cools.
  7. Let the loaf cool completely. Spread the frosting on top, sprinkle with the crushed Oreo and cut into 9 thick slices. Store in the fridge.
