Ingredients

  • Assorted tomatoes
  • Plenty of olive oil, plus more to finish
  • 2 tbsp balsamic vinegar
  • 1 garlic clove
  • A little thyme
  • Salt and black pepper
  • 1 sheet ready-rolled puff pastry
  • Burrata
  • Fresh basil leaves

Method

  1. Pour plenty of olive oil and the balsamic vinegar into an ovenproof skillet. Add the garlic, thyme, salt and black pepper.
  2. Cut the larger tomatoes crosswise into thick rounds. Arrange them in a tight, mostly single layer in the skillet, using smaller tomatoes or pieces to fill the gaps.
  3. Unroll the puff pastry over the tomatoes. Tuck the overhanging pastry down around the inside edge of the skillet, then prick the surface all over with a fork.
  4. Bake at 200°C (390°F) for 20 minutes, until the pastry is puffed and golden.
  5. Wearing oven gloves, cover the skillet with a large serving board or plate and carefully invert them together. Lift away the skillet to reveal the tomatoes.
  6. Tear the burrata over the warm tart. Finish with fresh basil, black pepper and a generous drizzle of olive oil.
