Ingredients

  • 200 g shredded Parmigiano Reggiano (the creator describes this as about 2 cups / 7 oz)
  • 1 cup flour (type not specified)
  • 4 tbsp cold butter
  • 3 tbsp cold water
  • Salt, optional, plus a light sprinkling before baking
  • Garlic powder, optional; amount not specified
  • Onion powder, optional; amount not specified

Method

  1. In a food processor, combine the shredded cheese, flour, cold butter and, if using them, salt, garlic powder and onion powder. Pulse until well incorporated.
  2. Add the cold water and pulse again, or mix by hand if the processor struggles. The dough should have a cookie-dough-like consistency. Form into a ball, cover and refrigerate for 1 hour; the creator says chilling is optional but makes rolling easier.
  3. Preheat the oven to 350°F (approximately 177°C). Divide the dough in half. Place one half between two sheets of parchment paper and roll it thinly; thinner crackers will be crunchier. Repeat with the other half.
  4. Cut the rolled dough into squares. Arrange on a baking sheet lined with parchment paper and poke a small hole in the middle of each square with a toothpick or chopstick. Sprinkle lightly with salt.
  5. Bake at 350°F for 12 minutes. Let the crackers cool and rest before eating so they become crunchy.
