Ingredients

Chocolate skyr layer

  • 300 g thick fat-free skyr
  • 40 g chocolate-flavoured whey protein concentrate
  • 10 g unsweetened cocoa powder
  • About 2 g cinnamon
  • Pinch of salt

Biscuit layer

  • 4 petit-beurre-style tea biscuits (20 g total)

Cookie skyr layer

  • 200 g thick fat-free skyr
  • 20 g cookie-flavoured plant-based protein
  • 0–60 ml unsweetened almond milk
  • Cinnamon, to taste

Divider and topping

  • 2 Lotus Biscoff biscuits (about 15.5 g total)
  • 50 g milk chocolate
  • 4 g coconut oil
  • 3–4 g desiccated coconut
  • 5–7 g tahini
  • 6 blueberries (approximately 12 g)

Method

  1. Mix the skyr, chocolate whey protein, cocoa, cinnamon and salt very well for 2–3 minutes. Spread evenly across the dish.
  2. Place the four petit-beurre biscuits over the chocolate layer.
  3. Mix the skyr, cookie-flavoured plant protein and cinnamon for the second layer. Start with no more than 0–20 ml almond milk, adding more only as needed to produce a thick, spreadable mixture. Spread it over the biscuit layer.
  4. Stand the two Biscoff biscuits end-to-end on their long edges, diagonally from the midpoint of one side towards the opposite corner, creating a small triangular section.
  5. Microwave the milk chocolate and coconut oil in short intervals, stirring after each one, until smooth. Spread it over the larger section outside the Biscoff divider.
  6. Sprinkle the desiccated coconut along one edge.
  7. Make six small drops using 2–3 g of the tahini in the exposed section, then place one blueberry on each drop. Drizzle the remaining tahini along the Biscoff divider.
  8. Refrigerate until the chocolate has fully set.
